Touted by world-class chefs including Paul Kahan, Gabriel Rucker, Elias Cairo, Katy Millard, Chris Bianco, and Aaron Franklin.

The chef knife handles 90%+ of kitchen tasks. STEELPORT's has earned the attention of cooking enthusiasts and professionals alike for its meticulous construction, outstanding edge retention, and thoughtful ergonomics.

Blade: American 52100 Carbon Steel

Forged from a single rod of American 52100 carbon steel, STEELPORT's proprietary differential heat treatment produces:

  • 65 HRC at the blade edge — one of the hardest blades in production for superior edge retention
  • 30 HRC at the spine — soft enough to absorb impact and resist chipping
  • Thin but sturdy, fully polished blade with a rounded spine and choil
  • Double-beveled edge ideal for slicing, rocking, and push-cutting
  • Versatile for meat, fish, vegetables, and herbs

Handle: Oregon Big Leaf Maple Burl

Each handle is individually resin-stabilized and hand-shaped from Oregon Big Leaf Maple Burl — chosen for its exceptional comfort and durability in tough kitchen environments. No two handles look exactly alike.

The Coffee Patina Finish

Every blade is literally submerged in hot coffee as a final step. This reacts with the carbon steel to create an initial protective layer and a beautiful dark dual-tone finish that is uniquely STEELPORT.

FAQs

What makes STEELPORT knives different?
The proprietary differential heat treatment creates a 65 HRC edge (exceptional hardness) with a softer 30 HRC spine — a combination that delivers superior edge retention without brittleness.

Is carbon steel hard to maintain?
Carbon steel requires a bit more care than stainless — hand wash, dry immediately, and apply a light oil occasionally. In return, it takes a sharper edge and holds it longer.

Is this knife made in the USA?
Yes. STEELPORT knives are forged and finished in Portland, Oregon.

What cutting styles does this knife support?
The double-beveled edge and balanced profile support slicing, rocking, and push-cutting techniques.
